We love Roasted Brussels Sprouts in pretty much every form. They are a simple and easy vegetable to roast, five minutes’ worth of work and you have delicious green leafy veggies that even the pickiest of eaters love. Roasting Brussels sprouts can be as easy as slicing them in half, tossing them on a sheet tray with a little olive oil, salt, and pepper, and roast for around 1-hour, and you’re done.
But I can’t leave well enough alone, if you’ve seen my Roasted Brussels Sprouts with Fennel recipe, you know I like to experiment. And now we get to this point, Roasted Brussels Sprouts with Apples and Bacon! Yum!
Apple Bacon Brussels Sprouts
Roasted Brussels sprouts with apples and smokey bacon are crisp and golden brown on the outside, creamy on the inside. The flavor is sweet, smoky, Earthy, and savory, with a little bite from the vinegar and mustard, and then there’s the combination of apples and bacon, oh yes, smoky bacon. The paring of roasted Honeycrisp and smoky bacon should be enough to get you to make this recipe. As the bacon roasts, the bacon fat renders giving the crispy golden brown color, and the smell and the flavor of the bacon get into the apples and Brussels Sprouts and you’ll want to eat the entire tray all by yourself.
How to choose Brussels Sprouts at the grocery store
- Fresh and healthy Brussels Sprouts should have the following characteristics:
- Bright green color
- Firm and heavy for their size
- Tightly packed leaves
- No yellowing or wilting leaves. Some yellow leaves are normal, but a lot of yellow could be a sign of age and indicate they were picked a long time ago
- No black spots, black spots could be a type of fungus
- Smaller Brussels sprouts are usually sweeter and more tender than larger ones.
How to prepare Brussels Sprouts for roasting
- Rinse the Brussels Sprouts under cold running water then pat dry so they aren’t steaming in the hot oven, we want the Brussels sprouts to roast.
- Trim the stem end of the Brussels sprouts to remove any brown or tough bits
- Remove any yellow or shriveled leaves
- Cut the Brussels Sprouts in half lengthwise
What Temperature to Roast Brussels Sprouts?
The good news is that you can roast Brussels sprouts at a fairly wide temperature range. But typically, the higher temperatures work best when roasting Brussels sprouts, I have roasted them from 350F up to 450F all with good results.
Because I only have one oven, I roast the Brussels Sprouts at the same temperature as whatever else is in the oven. Therefore, here is a guide for what temperature to roast Brussels sprouts.
- 350F: 60-75 minutes
- 375F: 45-60 minutes
- 400F : 40-55 minutes
- 425F: 35-50 minutes
- 450F: 30-10 minutes

Roasted Brussels Sprouts with Apples and Bacon
Ingredients
- 1 Pound Brussels Sprouts Halved, lengthwise
- 2 Cups Honeycrisp Apples Substitute any sweet baking apple 1-inch dice
- 1/4 Pound Smoked Bacon 1/2-inch dice
- 2 Tablespoons Apple Cider Vinegar
- 1 Tablespoon Dijon Mustard or Brown Mustard
- 1 Teaspoon Salt
- 1/2 Teaspoon Red Pepper Flakes
- 1/2 Teaspoon Black Pepper
Instructions
- Preheat oven to the desired temperature, see chart above
- Combine all ingredients in a large bowl and toss to combine
- Place on a sheet tray in a single layer, place in the oven
- give them a stir halfway through roasting. Roast until the Brussels sprouts have a nice color and the bacon is just crispy.
